Cashew Nut Biscuits

 

These are so easy to make and are really tasty. I used Cashew Nuts but I think that almond, pecan and macadamia would all work... not sure about Walnuts as they might be a little bit too oily but if you do try any other variations let me know. I think that these would also work well with the addition of spices such as cinnamon, all spice and cardamom.
 
1 cup Cashew Nuts
1/2 cup coconut flour
5 medjool dates
2 tablespoons coconut oil
 
Pre-heat the oven to 180c and grease a baking tray with coconut oil.
 
Start by pulsing the nuts and flour in a food processor or blender until you get a consistency close to fine breadcrumbs. Next add the medjool dates one by one (make sure you remove the stone first) followed by the coconut oil (make sure this is liquid).
 
The mixture should look like crumbs but when pressed together it should hold like a dough. Take a large tablespoon of the mixture and press in your hands to form a ball similar in size to a walnut. Place the balls on the baking tray and push down a little using a fork.
 
Bake in the oven for approximately 10 - 15mins. Be sure to keep an eye on them as they can turn very quickly. You want the edges of the biscuits to start to go golden.
 
Leave to cool for a few minutes then transfer to a wire rack.
