Raw Chocolate and Peanut Butter Fudge

 
 
One of my colleagues from work came back from the States this week and bought with her some peanut butter cups. I always forget how good they taste! I think chocolate and peanut butter is one of my favourite combinations. This raw fudge recipe is so easy to make and it isn't the worst thing in the world to eat.. there's the protein from the peanuts and magnesium from the raw cacao plus they are naturally sweetened from dates and a little bit of honey. Keep them in the fridge or even the freezer for the perfect mid afternoon pick-me-up!
 
 
 
8 fresh medjool dates
1/2 cup smooth peanut butter
1/4 cup ground almonds
2 tablespoons raw cacao powder
1 tablespoon honey

Place all the ingredients in a food processor (or blender) and whizz until smooth.

Transfer into a baking tray (ideally 14x14cm but you can use a larger tray like I have done). Lightly grease a spatula or the back of a spoon with oil to stop the fudge from sticking and push down until flat.

Place the tray in the fridge for at least 30mins. Once chilled slice into squares. Keep the fudge in the fridge and eat within 3 days.

Little Note:

If you have a nut allergy then you could replace the peanut butter with sunflower seed butter and the ground almonds with desiccated coconut.
