Banana and Walnut Breakfast Cookies



 

These cookies smell so yummy when they are baking. They taste great when they are cool, but they are pretty special straight out of the oven. We like to have these as a weekend breakfast with some fruit and coconut yogurt (a little like a pancake) but they are really lovely any time of the day. Packed full of oats and walnuts bound together with a banana and honey syrup. I love the combination of sweet banana and walnuts and hint of vanilla and honey. These are pretty good at curbing my sweet cravings too!


3/4 cup walnuts
1 cup oats
1 teaspoon of baking powder
2 bananas
2-3 tablespoons honey
2 tablespoons coconut oil (melted)
1 teaspoon vanilla extract

Pre-heat the oven to 180c and grease a baking sheet with a little coconut oil.

In a blender pulse the walnuts and oats until the consistency is a little like sand. Place in a large bowl with the baking powder and set to one side.

Add the bananas, coconut oil, honey and vanilla extract to the blender and liquidise. Add this sweet batter to the dry ingredients and combine. Leave for about 10mins or so to let the walnuts soak up some of the sweet batter and become a little thicker.

On the baking tray dollop a tablespoon of the mixture leaving enough room around the biscuits to spread a little. Decorate with extra slices of banana or walnut.

Place in the oven for around 15mins or until they just start to catch on the edges and go golden brown.

Little Note:

You don't have to use walnuts or if you don't have them to hand. Pecans also work really nicely and ground almonds would also work.

If you don't have a blender you can replace the walnuts with ground almonds and leave the oats as they are for a little added texture. Then simply mash the banana with a fork and add the remaining the ingredients to the bowl to combine.
